A salmon pastry easy to make and amazing!


  • For 6 persons :
  • 500 g puff pastry
  • 400 g salmon fillets
  • 2 hard boiled eggs + 1 yellow
  • 100 g of rice
  • 250 g of spinach in frozen branches
  • 100 g of butter
  • 50 cl of liquid cream
  • 2 lemons
  • 2 shallots
  • 1 bunch of parsley
  • 1 bunch of chives
  • salt
  • pepper


Defrost spinach on low heat, wring and chop. Chop the shallots and fry them in a knob of butter. Add the spinach, salt and pepper and cook for 10 minutes. Cook the rice, drain it and add half of the butter. Fry the salmon for 5 minutes on each side in the remaining butter. Salt, pepper and remove. Chop the herbs. Keep 2 c. soup for the sauce. Chop the eggs. Preheat the oven to 180 ° C (item 6). Cut into the puff pastry 2 rectangles. Put one of them on the oven plate. Spread rice, herbs, salmon, spinach and chopped eggs. Cover with the other rectangle. Weld the edges with water, brush with beaten egg yolk, bake for 45 minutes. Heat the cream over low heat. Add remaining herbs, lemon juice, salt, pepper. Serve the koulibiac with its sauce.
